Green Crumble Pie

My spinach crumble recipe will amaze you ! It is a small savory pie, the perfect one for brunch. Tasty and loaded with proteins,  light but satiating with a small shot of green veggies for vitality. For this I used:

For the pastry :

– 160 grams of einkorn white flour

– 40 grams of split peas flakes

– 4 tablespoons olive oil

– 1 tablespoon of white almond puree (optional)

– 1 pinch of paprika

– salt

For the mousse : 

– 2 onions

– 2 eggs

– 150 grams of frozen spinach

– 1 green pepper

– 100 milliliters of soy cream

– 1 tablespoon olive oil

– 1 teaspoon hot curry

– Salt / pepper

For the crumble :

– what remains of the pastry

– 50 grams of plain tofu

– 50 grams of almonds

– 1 tablespoon of thyme

– 1 handful of toasted blond sesame

To sprinkle after cooking: chives

Preparation is quite simple. Start by amalgamate all the ingredients for the pastry with a spatula. Add enough water to form into a dough ball. Roll the dough into a pie pan and set aside dough leftovers. Precook ten minutes in an oven preheated to 180 ° C.

For the crumble, get the unused dough and mix with tofu, almonds, thyme and sesame flour until obtaining a homogeneous grainy texture.

Mix all the ingredients of the spinach mousse and pour over the pastry. Bake 30 minutes. Sprinkle with crumble topping and re-bake for 15 minutes. Garnish with chives. And bon appétit!
